Easy Vegan Avocado Smoothie

A ripe, bruise-free avocado is like finding the pot of gold at the end of a rainbow with the caveat of going bad if stored too long.

Of course, avocado toast or guac are honorable destinies for an avocado but an interesting one you should try once should be an avocado smoothie. Mellow, sweet, and beautifully creamy. And this one is vegan!

Ingredients

  • Half a fresh large ripe avocado
  • About one cup of ice
  • About half to one cup of sweetened vanilla soy milk or other milk of choice.
  • 1-2 tablespoons of sweetener, I used confectioners Swerve.

Instructions

Add half cup of vanilla soy milk, one tablespoon of Swerve, and rest of ingredients to a single serve blender device (or whatever you have on hand. I used the Nutri Ninja Cup of a food processor-blender system). Blend to desired consistency using the amount of vanilla soy milk to adjust thickness of smoothie. Adjust amount of sweetener to desired sweetness level.

There’s nothing more satisfying than a cup of this stuff! Feel free to drink with home-cooked boba and big straw, or top with fruit of choice, or drizzle with honey, or sprinkle with home-made granola! There are so many options!
